Tomato confit is a healthy starter or side dish. It’s really easy to prepare! Bruschetta with citrus tomato confit are a savory alternative to the traditional tomato bruschetta.

Confit is an effective method for preserving fruit and vegetables. Tomatoes are seasoned with salt, oil and sugar and caramelized in the oven at low temperature for about an hour or two. Tomatoes should be cut into two parts and seasoned only with fresh herbs, according to the traditional recipe.

To prepare tomato confit

  • 600 g cherry tomatoes (not too ripe)
  • 50 g whole cane sugar Muscovado o Dulcita
  • 6 g whole salt
  • 2 spoons extra-virgin olive oil
  • 1 organic lemon, whole zest
  • 3-4 organic lemon leaves
  • 1 organic orange, whole zest
  • 1 organic lime, whole zest
  • 1 bunch of sage
  • 1-2 sprigs of fresh rosemary
  • 5 bunches of thyme

To prepare bruschetta

  • 1 whole bread or sliced cereal bread
  • 1 clove garlic (optional)
  • 1/2 tablespoon extra-virgin olive oil

Directions

To prepare tomato confit

  1. Preheat the oven to 120C°.
  2. Clean and wash cherry tomatoes. Remove sprigs and leaves if you like. Place tomatoes on a tray (or in a bowl), add salt and sugar.
  3. Pour olive oil and gently massage the tomatoes to make sure they’re all seasoned.
  4. Add citrus grinds and herbs and gently massage again.
  5. Place them on a baking dish (if you mixed in a bowl), put into the oven (120C°) and bake for 75 minutes. Check the state of the cooking from time to time. The tomatoes should not be completely opened.
  6. Remove from the oven and clean the tray (remove all water deposited in the bottom). Remove the tomatoes from the baking dish, let them get to room temperature while you prepare the bruschetta.

To prepare bruschetta

  1. Clean the baking dish with a rag to remove water and sugar. Rub a garlic clove over the sliced bread (optional).
  2. Pour the olive oil in the baking dish and put on the stove, on a naked flame. Add sliced bread and roast on both sides until pale gold. Bread can also be grilled in the oven.
  3. Serve bruschetta with tomato confit.
Notes

Confit tomatoes can also be used as a pasta sauce. Try them with spaghetti as an extremelty savory light meal. They can also be served as a delicious starter, or as a side dish.
