Ingredients for 2 people

To prepare crêpes

  • 130 g 00 flour
  • 250 ml soy milk
  • 1 tablespoon seed oil
  • 1 tablespoon sugar
  • 1 egg

To prepare the filling

  • 2 tablespoons cane sugar
  • knob butter
  • cinnamon powder
  • maple syrup
  • 2 apples

Directions

  1. Beat together eggs, sugar and oil until completely blended.
  2. Drizzle in milk and then add sifted flour. Keep beating until well blended to get a lump-free batter.
  3. Cover with a cling film and put in the fridge for 30 minutes. In the meantime, peel and chop the apples. Place them on a non-stick pan together with cane sugar, butter and cinnamon.
  4. Cook for 2 minutes until the apples are caramelized and sugar is completely dissolved.
  5. Remove the batter from the fridge and lightly grease the frying pan. Then eliminate the exceeding oil. Heat a non stick frying pan on a moderate flame and pour a ladleful of batter when the pan is very hot. Spread batter mixture all around frying pan and wait until the crepe is even in thickness. Then turn it over and cook on the other side for a few seconds.
  6. Fill the crepes with the apple filling and sprinkle with maple syrup or icing sugar. Serve warm.
