Indian bread Chapati served with a vegetarian side dish of: spiced chickpeas, grilled pumpkin and yogurt sauce.
The Chapati bread is a typical bread of the Indian cuisine, which is very similar to our “piadina”.
It’s prepared using no yeast and with only 3 ingredients: flour, water, salt; it’s daily prepared and eaten in India, like our bread with meat, vegetable and traditional sauces.
I’m suggesting that you had some chapati bread with spicy side dish chickpeas, red cabbage, grilled pumpkin and flavoured with yogurt sauce.
RISOLÌ® GRILL NON SOLO PIZZA
I cooked chapati and also the pumpkin using Risolì GRILL “NON SOLO PIZZA”, 100% made in Italy. It’s perfect both for baking in the oven and for the stove and it can be used to serve the food on the table keeping it warm longer.
Ingredients for 4 people
To prepare Chapati bread
- 360 g Flour type 1or whole flour
- 225 ml sparkling water
- 1 tablespoon fine salt
To prepare spicy chickpeas
- 250 g pre-cooked chickpeas
- 2 tablespoons tomato puree
- 1/2 hot chili peppers
- 1 teaspoon sweet paprika powder
- 1 teaspoon curry powder
- 2 tablespoons extra-virgin olive oil
- 1 pinch of fine salt
- 1 pinch of black pepper
To prepare the yogurt sauce
- 170 g natural Greek yogurt
- 4 tablespoons mayonnaise
- 2 tablespoons lemon juice
- 1/2 hot chili pepper
- 1 pinch of fine salt
- 1 pinch of black pepper
To serve
- 300 g pumpkin with peel
- Coarse ground salt q.s.
- 1 red cabbage
- Tablespoon extra-virgin olive oil q.s.
Directions
For the chapati bread
- In a bowl, combine and mix with a fork: flour, a hint of salt and sparkling water. Transfer the mixture on the pastry board and knead for 10 minutes.
- Divide the dough into little stretches; with these quantities you’ll obtain 9 pieces.
- Lay out the dough stretches with the rolling pin and cook them on the Risolì GRILL NON SOLO PIZZA, well pre-heated. Cook at a medium hot temperature for about a minute each side. Once ready heat directly on the burner in order to make it rise.
For the hot plate cooked pumpkin
- Slice the pumpkin in not too thick slices and cook it on the Risolì GRILL NON SOLO PIZZA for 5 minutes, turning it in order to grill it on both sides. When cooked add rough salt.
For the spiced chickpeas
- Brown in a pan the chickpeas with the condensed tomato, the spices and a little bit of olive oil. Cook them for 5 minutes adding a spoon of water if they’re drying too much.
For the yogurt sauce
- For the yogurt sauce mix in a bowl the greek yogurt, the mayonnaise, the lemon juice, the finely minced pepperoncino, add salt and pepper to your taste and keep in the fridge until ready to use.
Notes
Serve the chapati bread with spiced chickpeas, sliced pumpkin cooked on the hot plate and the red cabbage. Flavour with the yogurt sauce.
