The stewed chicken with wine, fresh herbs and Taggia olives is a very simple, quick and easy. You’ll only need a few ingredients for a delicious meal.

Ingredients for 4 People

  • 1 kg skinless chicken drumsticks
  • Taggia olives
  • 2 bay leaves
  • 2 sage leaves
  • 1 sprig of fresh rosemary
  • 2 garlic cloves
  • 2 tablespoons extra-virgin olive oil
  • 1/2 glass of dry white wine
  • Salt
  • Freshly ground black pepper


  1. Mince garlic cloves and place them in a frypan or in saucepan, together with fresh herbs. Brown with a trickle of extra-virgin olive oil.
  2. Add skinless chicken drumsticks and brown on both sides.
  3. Add Taggia olives and simmer with white wine.
  4. Raise the flame and let the alcohol evaporate. Season with salt and pepper.
  5. Close the lid and let cook. It will take 20/25 minutes, depending on the chicken size.
  6. Check whether the chicken is cooked. It should be tender inside, but the meat should be white straight to the bone.
  7. Serve.
